Some vacations sneak up on you. We pulled into Majestic Oak Resort in Rockport, Texas, expecting a nice pit stop on our road trip… but we ended up staying longer than planned because it felt so easy. The kind of place where the kids stay outside until the sun disappears, where neighbors wave like they’ve known you forever, and where the air just hums with relaxation (and hummingbirds—literally).
Under the Shade of Giants
The first thing we noticed? The oak trees. Huge, twisting branches stretching across the sky, shading the whole resort like nature’s umbrella. Parking under them felt like being hugged by something ancient and wise.
Our kids immediately ditched us to “go exploring” while we set up. They came back with acorns in their pockets and stories of squirrels chasing each other, while I just stood there thinking: We might never leave this place.
Hummingbirds Everywhere!
We accidentally timed our visit during the HummerBird Celebration, which turned out to be a total highlight.
Imagine sipping your morning coffee outside and dozens of hummingbirds zipping around like jeweled drones. The kids made a competition out of counting them (I lost track at 20). Later, we joined some festival walks and talks, and I swear—our 11-year-old has been converted into a junior bird nerd. She even made us whisper during breakfast so we wouldn’t “scare the hummers.”
Resort Life: Easy, Breezy
The resort itself was pure comfort: shaded sites, sparkling pool, clean showers, and Wi-Fi strong enough for the kids to stream cartoons before bed. But the best part? It never felt crowded. Our neighbors gave us space, but also shared grilling tips and birdwatching stories when we felt like chatting.
Cooking on the Charcoal Grill 🍴🔥
Since we love traveling light, we relied on our little charcoal grill almost every night. Being surrounded by nature made those smoky dinners taste extra special. Here are a few of our go-to recipes from the trip:
1. Hummingbird-Inspired Skewers (Don’t Worry—It’s Just Chicken!)
- Cubes of chicken breast
- Pineapple chunks
- Red bell pepper + red onion pieces
- Brush with teriyaki glaze and grill until caramelized.
- Serve over rice or eat right off the stick.
2. Campfire Street Corn
- Ears of corn, husked and buttered
- Sprinkle with chili powder + a squeeze of lime
- Wrap in foil, toss on the grill for 15 minutes.
- Finish with cotija cheese if you’re feeling fancy.
3. Lazy S’mores Bananas
- Slice a banana lengthwise (don’t cut all the way through)
- Stuff with chocolate chips and mini marshmallows
- Wrap in foil, grill for 5 minutes
- Eat with a spoon—gooey, melty, no mess.
One evening we even had an impromptu “grill-off” with the couple camped across from us. They shared their ribs, we passed around skewers, and somehow we all ended up with full bellies, sticky fingers, and new friends.
Why We’ll Be Back
Majestic Oak Resort gave us everything we crave on the road: shade, space, comfort, and unexpected magic (hello, hummingbirds!). Add in smoky dinners under the oaks, late-night swims, and mornings where time felt slow enough to savor… and it became one of those trips the kids keep asking to repeat.
If you go, pack binoculars and marshmallows. You’ll thank me later.
